We obviously love all things LEGO and I’m never one to turn down dessert. These LEGO cupcakes are perfect for a LEGO-themed birthday party, movie night, or any fun get-together where building will be involved.
Obviously, these LEGO cupcakes are super cute but they are also absolutely delicious! The completely edible LEGO bricks on top of the cupcakes are actually fondant-covered crispy rice treats.
Whip up 12 of your favorite vanilla or yellow cupcakes (box mix is just fine!).
Ensure that your cupcakes are completely cool before decorating. With an electric mixer, mix together butter, sugar, and milk, gradually increasing the speed to high. These ingredients will make your buttercream and you’ll know that it’s ready once it’s smooth and forms semi-stiff peaks.
Save about 3 Tbsp of the buttercream in a separate bowl. Color the rest of the buttercream with yellow food coloring. Frost each cupcake with yellow buttercream.
Line a baking sheet with wax paper and cut your crispy rice treats (pre-packaged ones work great!) into small, rectangular shapes (about 2 in x 1 in). Spread entirely with white buttercream. You’ll need 24 of them.
Roll each fondant color to be about ¼ of an inch thick. Using the tip of a #12 Wilton icing tip, cut out 16 circles of each fondant color. (Hint: cornstarch will help the fondant from getting too sticky.)
Cover each rectangular crispy rice treat with fondant. You should have 8 of each color.
Use a paintbrush to brush a dab of water on the back of each mini circle fondant. Place 2 per rectangle.
Finish the cupcakes by placing 2 “LEGO bricks” on top of each cupcake.
